Our Dojo Blue Steel Vegetable Knife is made by master of blacksmiths Kobayashi, long noted for the quality of his blades. He has on occasion been selected to supply special ceremonial knives to the imperial family. Dojo blades are made by forge welding a core of high-carbon #1 blue steel sandwiched between two layers of stainless steel. Blue Steel is a complex steel noted for its ability to hold an exceedingly sharp, long lasting edge. The blade is tempered to Rc62. The handle is a lamination of very thin slices of resin impregnated wood and is impervious to water for a lifetime of use. Blade length is 6½" and overall length is 11¼". Each blade comes razor sharp with instructions for maintaining this edge.
