Our 11¾˝ Tagane Sushi Knife is hand forged and shaped one blade at a time. The blade is V2 high carbon alloy steel inlaid onto soft wrought iron material. This process produces a tough, long lasting edge which is easy to sharpen. The maker Mr. Tsuneo Yoshida is proud of the hand hammered Tagane surface which creates a well-balanced knife of lasting beauty. Knives made by Mr. Yoshida are eagerly sought after by the knowledgeable chef. The handle is magnolia wood with a water-buffalo horn ferrule. The blade length is 11¾˝, and overall length is 18˝. Each knife is sent with a fully polished razor sharp edge.
