A Traditional Japanese Professional Knife (Hocho) varies from other kitchen knives in that it is sharpened with a bevel on only one side. The opposite side is slightly hollowed, similar to a Japanese chisel or woodworking knives. This makes it possibles to acheive a sharper edge than a knife a with a double bevel blade. Deba Knives have a thicker blade and are intended for reducing fish and meat to a more manageable size.
