Nashiji Vegetable Knives, made by swordsmith Teruyasu Fujiwara the fourth, are among the finest in the world. He explains that the manufacture of these knives requires all of the sword making experience and techniques passed down in his family through the generations. As with famous swords of old, he has given these knives a name,Nashiji which refers to the rough skin of the Japanese pear. Nashiji knives are made in the rural pattern whose shape has been found in 2,000 year old grave goods.

Mr. Fujiwara makes the complete knife from start to finish. For the blade, he uses a proprietary #1 white high carbon steel (1.5%) called Izuha-kou forged laminated between two layers of stainless steel. The blade is then hardened to Rockwell 64-65 and attached to traditional Japanese style magnolia wood handle. Each knife is fully polished to a razor edge. Blade length is 5˝, and overall length is 10½˝.
