The center layer is rust resistant SKD die steel originally designed for cutting metal. The cladding layers are soft SUS-405 stainless steel. This gives the knife an exceedingly tough, long lasting edge and yet is easy to resharpen. This style of knife is commonly used for slicing Sushi rolls. But you will find it superb for slicing foods of all types. The stainless steel bolster between the blade and the handle is made from slices of hardwood impregnated with resin. The maker Mr. Tsuneo Yoshida is proud of the hand hammered surface which creates a well balanced knife of lasting beauty. The blade length is 8¼˝, and overall length is 13½˝. Each knife is sent with a fully polished, razor sharp edge.
