Plank grilling owes its heritage to the Native American culture. Fish were bound to large cuts of Alder or Cedar wood and vertically roasted downwind of a bonfire. Now adapted for use on standard barbeque grills, plank grilling imparts subtle smoky flavors into meats, seafood, and other grilled items. The technique results in foods that are moist, healthy, and full of flavor. Simply soak the plank in water for 1 hour or more, heat on grill for 3 minutes, add food and cook to perfection with a closed grill lid.
