This means that the blade is forged in the old style, one hammer blow at a time. There are few smiths left that can claim the hontanren title. To form the blade, Akitada forge welds the best quality high carbon steel to soft wrought iron. Each blade is individually heat treated and hardened to Rc63. Very few pieces of Akitada Hontanren knives are made each year, and they are highly sought after by professional chefs. A traditional style Japanese Oak handle completes the knife. Akitada Hontanren Chinese Knives are sent with a razor sharp edge and instructions for maintaining this edge. Blade length is 8¼˝".
