Our 10¾˝ Blue Steel Sushi Knife is used for slicing the raw fish. It is also suitable for fine slicing of other meats. The blade is a hand forged lamination of soft steel and high carbon blue steel. Blue steel has added elements to toughen the edge and give it better wearing qualities. A traditional black finish Kuro Uchi has been applied. Generally Kuro finished knives are used in the kitchen and never in view of one's guests. The blade length is 10¾˝ and overall length is 18˝.
